Scavanger Saturday

1. I crocheted this afghan years ago.


2. Rusty began collecting dragons when we visited Taiwan in 2004. My parents picked up this dragon wall-hanging for Rusty in Thailand.


3. I remember my mom reading this book to me numerous times when I was little. I loved it! It's the story of Jonah and Nineveh...told from the perspective of the worm that ate the tree.

Friday Five


1. Work has been painful this week. Painfully slow and boring!

2. Our little suburb went pretty suddenly from having zero Chinese restaurants to having three! 3! What on earth?! We've only tried one of them so far, and it was ok. Well, Rusty liked it, but I thought it was just ok. We plan on trying the other two and will hopefully find our favorite.

3. We also just recently got a Mexican restaurant...it was delicious!

4. Yes, sit-down eateries are a BIG dealio for us...before this sudden influx we only had one sit-down place.

5. I had to work today. Yuck. I would have much rather gone shopping. I don't do the crazy Black Friday shopping, but I do like to go and do some shopping.

Pumpkin Cake with Cream Cheese Frosting

I love the light pumpkin flavor and delicious cream cheese frosting. I make this at least one around Thanksgiving or Christmas. This recipe does not use pumpkin spice seasoning but instructs you to use ginger, cinnamon, and allspice to give the cake a subtle spiciness. It’s simply fantastic. Recipe from Cook's Country.

Ingredients:
Cake:
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon ground ginger
4 large eggs
1 cup vegetable oil
1 2/3 cups granulated sugar
1 (15-ounce) can pumpkin puree

Frosting:
6 tablespoons unsalted butter, softened
1 1/2 cups confectioners' sugar
1 (8-ounce) package cream cheese, cut into 8 pieces and softened
1 teaspoon vanilla extract

Directions:
1. For the cake: Adjust oven rack to middle position and heat oven to 350 degrees. Grease and flour 13 by 9-inch baking pan. Whisk flour, baking powder, baking soda, salt, and spices in bowl. With electric mixer on medium-high speed, beat eggs, oil, and granulated sugar until thick and fluffy, about 5 minutes. Reduce speed to low, add pumpkin, and mix until incorporated. Slowly add flour mixture and mix until only a few small lumps of flour remain, about 1 minute. Scrape batter into prepared pan and bake until toothpick inserted in center comes out clean, 30 to 35 minutes. Transfer pan to wire rack and cool completely.

2. For the frosting: With electric mixer on medium-high speed, beat butter and confectioners' sugar until fluffy, about 2 minutes. Add cream cheese 1 piece at a time, beating thoroughly after each addition. Add vanilla and mix until smooth. Turn cooled cake out onto wire rack, then invert onto serving platter. Frost cake and serve. (Cake can be refrigerated for up to 3 days. Bring to room temperature before serving.)
