This is a super easy and delicious pasta dish that you can make in just a skillet. There is no need to cook the pasta separately.
Ingredients:
3 tablespoons vegetable oil
1 pound lean ground beef
1 medium onion, chopped
1 medium red bell pepper, chopped
Salt & pepper
4 cloves garlic, minced
1 tablespoon chili powder
1 tablespoon ground cumin
2 cups elbow macaroni
1 (29 ounce) can tomato sauce
2 cups low-sodium chicken broth
1 1/2 teaspoons dried oregano
Salt and pepper
1 cup shredded cheddar cheese
Directions:
1. Heat 1 tablespoon of the oil in a 12-inch skillet over medium-high heat until shimmering. Add the beef and cook, breaking up the pieces with a wooden spoon, until no longer pink, about 5 minutes. Drain.
2. Add the remaining 2 tablespoons oil to the skillet and return to medium-high heat until shimmering. Add the onion, bell pepper, and 1/2 teaspoon salt. Cook until the vegetables are softened, about 5 minutes. Stir in the garlic, chili powder, and cumin and cook until fragrant, about 15 seconds.
3. Add macaroni, tomato sauce, broth, and oregano to skillet and bring to boil. Cover, reduce heat to low, and simmer, stirring occasionally, until pasta is tender, 8 to 10 minutes. Season with salt and pepper. Sprinkle with cheese.
