Asian Pasta and Green Bean Salad

I like to top this salad with some grilled shrimp. 

Ingredients:
3 ounces uncooked linguine
1 pound green beans, trimmed
1 cup celery, thinly sliced 
1 cup red bell pepper, thinly sliced
1/2 cup green onions, sliced 
1/3 cup chopped cilantro or parsley
1/4 cup rice wine vinegar
1/4 cup soy sauce
2 tablespoons dark sesame oil
2 teaspoons fresh ginger, minced
1/2 teaspoon sugar
1/4 teaspoon freshly ground black pepper
3 garlic cloves, minced
1 teaspoon red chili paste (such as Sambal Oelek)

Directions:
1.  Break linguine in half. Cook pasta according to package directions; add beans during last 3 minutes of cooking.

2.  To prepare dressing, combine vinegar, soy sauce, sesame oil, ginger, sugar, pepper, garlic, and chili paste in a large bowl; stir with a whisk until blended.

3.  Stir celery, bell pepper, onions, and cilantro/parsely into bowl. Pour 1/2 cup water from cooking pasta into bowl.

4.  Drain and rinse pasta with cold water; drain. Add to salad; toss well. Serve at room temperature or chilled.

  1. This sounds yummy! I shall now ask another question. :) How do you mince your ginger? By hand, or do you use a chopper? If I don't have fresh ginger, can I use powdered? Oops. That was 2 questions. :D

  2. My method to mince ginger is easy (but not really the 'correct' way). I cut the skin off so the ginger is in a rectangle. Then I cut the ginger into thin slices lenthwise. Next I stack up the slices and cut them into matchsticks. Finally, I pile up the matchsticks and mince. :)

    But yes, you can use powdered. Maybe start with 1/2 teaspoon?
