We like to eat this as an appetizer with Spicy Sweet Chili Doritos. But it's equally good on it's own.
Ingredients:
1 cup uncooked white rice
1 1/2 cups frozen corn, thawed
1 can (15 ounces) black beans, drained and rinsed
6 green onions, sliced
1/4 cup jarred jalapenos, diced
1/4 vegetable oil
2 tablespoons cider vinegar
2 limes, juiced
1 teaspoon chili powder
1/4 teaspoon cumin
1 teaspoons honey
1/2 teaspoon salt
Directions:
1. Cook rice according to package directions.
2. Meanwhile, combine corn, black beans, green onions, and jalapenos in a large bowl. In a small bowl, whisk remaining ingredients together.
3. When rice is done, stir into corn and bean mixture. Pour dressing over rice and stir to combine. Cover and refrigerate at least two hours.
