Roasted Rope Sausage with Veggies

This is a great fall recipe, but I figured I could add the zucchini and tomatoes I got from the Amish and make it a spring recipe.


Thin rope sausage (any flavor will do, apple & onion rocks)
Herbed basting oil (I use Weg.man's garlic & herb basting oil)
2 sweet potatoes, peeled and cubed
1-2 lbs fingerling/baby Yukon gold potatoes, cubed slightly smaller than sweet potatoes to promote even cooking
1 onion, cut into large pieces
Any other veggie you have on hand, cubed

1.  Preheat oven to 450 degrees.
2.  Heat small amount of EVOO in large skillet then saute rope sausage, 4 minutes on both sides. Remove from skillet.
3.  Meanwhile add potatoes to large bowl and mix in herbed oil, salt, and pepper. Add to skillet and saute for 2 minutes. Put in oven for 15 minutes, stirring occasionally. Add other veggies to skillet and bake for 15 more minutes, stirring occasionally. Add sausage to top of veggies and bake for 10-15 more minutes, until veggies are tender.
