Beef with Vegetables



Slice the meat across the grain into thin pieces. Next take each thin piece and cut them into skinny strips. This is time consuming, but worth the effort! Tender and yummy beef.

Ingredients:
Beef tenderloin, flank steak, or London broil – cut into thin strips
Pinch baking soda
1 bell pepper, julienne
2 carrots, julienne
2 celery ribs, julienne
1 sweet onion, julienne
¼ cup bean sprouts
1 tablespoon soy sauce
Vegetable oil
2 ½ tablespoons cornstarch, divided
1 cup chicken broth
1 teaspoon ginger, grated
½ teaspoon salt
1 teaspoon sugar

Directions:
1.  Mix baking soda, soy sauce, 1 teaspoon vegetable oil, and 1 teaspoon cornstarch and pour over sliced meat. Let marinate for 20 minutes.

2.  Heat 2 tablespoons vegetable oil in wok over medium-high heat. Cook beef in batches, then remove to drain on plate with paper towels.

3.  Add more oil if needed, bell pepper, carrot, celery, onion, and been sprouts. Add salt and stir fry until tender. Add ginger and cook until fragrant. Add sugar and mix well. Return beef to wok and mix well.

4.  Stir 2 tablespoons cornstarch into chicken broth and add to wok, cooking until sauce thickens. Serve.
